Cranberry Apple Cake

2 C. flour
1 C. cocoa powder
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
2 T. vanilla
2 eggs
1/4 C. vegetable oil
1 c. cranberry jelly
2 apples: Granny Smith,
peeled & grated
1 3/4 C. sugar
1 C. milk

Preheat oven 350 degrees F.
Spray Bundt or tube pan with nonstick
cooking spray. In large bowl, combine
milk, eggs, vanilla, oil, & sugar; mix until
well combined. Sift in flour, cocoa, baking
soda & powder; mix well. Add grated apples
& cranberry jelly; mix until well combined.
Pour batter into prepared pan. Bake 50-55
minutes or until toothpick inserted into
cake comes out clean. Let cake cool in pan
15 minutes then turn onto a plate. Let
cake cool 1 hour before serving.

(you can also add ground nuts, if desired)
